The Knight potions temporarily raise your Heavy Armor skill, which in turn makes the heavy armor you wear more effective. Each dose lasts 60 seconds, so they are best used right before a tough encounter rather than as a long-term buff. Warriors who rely on heavy plate get the most out of them, especially early on, when a skill bump of 10 to 25 points makes a noticeable difference.

Where to find them
Knight potions are leveled finds rather than unique items. You pick them up as loot and can buy them from vendors who carry potions. Since many potions in Skyrim scale with the Dragonborn, the Philter and Elixir grades become more common at higher levels.
Brewing your own
Anyone with the Alchemy skill can craft these at an alchemy lab by mixing ingredients that share Fortify Heavy Armor:
Eating an ingredient reveals one of its effects, which lets you pick Fortify Heavy Armor directly in the lab menu instead of guessing.
Tips
Sabre Cat Tooth also restores stamina, and Slaughterfish Scales also fortify blocking, so a three-ingredient mix can stack useful side effects for a front-line fighter. Combine with Fortify Block potions when you plan to stand your ground behind a shield.
